Honey vs Sugar

I did some research on the internet. I wanted to know what is the differencies of sugar and honey.

The first thing what I checked was the GI (Glycemic Index) and I was very surprised because there is not to much different.
Pure honey has a GI of 58. But what about the sugar? According to the database, sucrose has a GI of 60. (supermarket sugar is also known as sucrose).
So we can say the sugar is worse, because sugar has higher GI. which measures the negative impact of a given food on the blood-glucose level. The lower the GI rating, the slower the absorption and infusion of sugars into the bloodstream and hence a more gradual and healthier digestion process.

The second point of view the enzymies.
Known as the "life force", enzymes are complex protein molecules found in every cell in your body. They are biological catalysts which accelerates chemical reactions occurred in our body. Just as our bodies produce enzymes, all living organisms produce their own enzymes to provide the nutrients they need. All our food, whether plant or animal, contains enzymes.

When we eat table sugar, our stomach has to use its own enzymes to separate the molecules apart before we can use the sugar's energy. Honey is quite different. The bees have added a special enzyme to the nectar that divides the sucrose into glucose and fructose -- two simple sugars for our bodies can absorb directly.
So we can say the honey is better then sugar.

Unlike honey, table sugar lacks minerals and vitamins (hence it's been often called empty calories).
The sugar  in the process of manufacturing, the organic acids, protein, nitrogen elements, enzymes and vitamins in the sugar cane are destroyed, whereas honey, a natural sweetener, subjects only to minimal heating. Also, honey has certain beneficial antioxidant and antimicrobial properties which are not present in table sugar.

So definietly we can say the honey is better then sugar but my final conclusion is:
If we want to keep a low carb diet we should leave both of them.
Ok, but what should we use for sweeten our food or drink?
Thanks for paleo I have already found the perfect alternative of the sweetener, and it's 100% natural.
This is the xylotol. Before this discovery I used honey but I'v changed it for xyletol.

In any case, if someone asked me what is better sugar or honey, I would say HONEY.
